Raclette


Winter is coming. And nothing says winter like a warm, spirit-lifting raclette meal. Think creamy, melted cheese covering vegetables and charcuterie. This is such a simple dish with a prep time of about ten minutes and a cook time of six. It's a hit with the kids and perfect for a casual dinner party.

              special equipment needed: a raclette grill*    

Ingredients:
  • Boiled potatoes (red or white), two per person
  • Sliced Vegetables such as bell peppers,  zucchini, mushrooms, even artichoke hearts)
  • Extra Virgin Olive Oil
  • A variety of "charcuterie" such as Serrano ham, chorizo, rosette, regular ham (etc.)**
  • Cornichons, served in a small bowl
  • Red Onion- diced and served in a small bowl
  • Tomatoes- diced and served in a small bowl
  • Slices of Raclette Cheese***, four-five slices per person
  • Salt and fresh ground pepper
  • Dipping Sauces
*You can buy raclette grills online at a site like Amazon.

** Pescetarians can grill shrimp or other seafood on the grill top.

***Raclette cheese may be hard or expensive to find outside of Europe. Substitute with Gruyère.


The How To:

Fill a pot with salted water and bring to a boil. Boil the potatoes for 18 minutes and prepare all vegetables as noted above– dicing or chopping. Oil a pan and set burner to medium/high. Sauté the sliced vegetables until tender, about six-seven minutes, and seasoning with salt and pepper to taste. Drain potatoes. 

Presentation:
Plug in your raclette machine. Set the meats and cheese on a serving platter. Place the bowls of diced vegetables. Place the potatoes and sautéed vegetables on the grill top of the raclette machine. Save for the cheese, each guest chooses what they'd like and chops the ingredients up on their plate. Slices of cheese are placed in the raclette dishes and melted in the lower compartment. Each guests pours cheese over the meat and vegetables, stopping when they feel they are going to turn into a mouse...


Serve with a variety of sauces and dips (Dijon Mustard, herbed Mayo, sauce au poivre, brown sauce),
baguettes and a crisp green salad with a light balsamic or lemon-mustard dressing.
